Easy Buffalo Chicken Flatbread
I love how fast and convenient it is to make a snack or a meal using flatbread. It’s an ideal option if you live in a tiny apartment or dorm room. Plus, it can be enjoyed as is or toasted in a toaster oven in just a few minutes.
It’s quick, simple, and budget-friendly.
Ingredients and Tips
Chicken: You can use any cooked chicken for this recipe. If you have access to a grill, consider grilling extra chicken as it can be used for various other meals. Alternatively, you can cook chicken in a slow cooker for this recipe. Tyson also offers grilled and frozen chicken that comes in whole breasts or chopped. Rotisserie or canned chicken can also be used, but I recommend them as a last resort. I’ve even tried this recipe with leftover fried chicken strips, and it was a hit with my boys. If you prefer a meatless option, you can use cooked cauliflower instead of chicken.
Bread: I usually opt for naan bread from the grocery store. It’s usually available either in the bread section or at the deli. (If you have access to Aldi, they usually offer it at a lower price than other places.) Naan bread comes in different sizes. You can also use small, pre-cooked pizza crusts or flour tortillas. Nowadays, there are also plenty of low-carb and gluten-free wraps and flatbreads, such as cauliflower crusts, available. One of my personal favorites is Joseph’s Lavish bread and Joseph’s pita bread, which would make an excellent base for this flatbread pizza.
Buffalo Sauce: My go-to Buffalo wing sauce is Sweet Baby Ray’s. It has a pleasant level of spiciness without being overwhelmingly hot. I recently discovered a sugar-free, low-carb buffalo sauce that is absolutely amazing! You can find a wide variety of Buffalo sauces alongside ketchup and BBQ sauce at most grocery stores.
Cheese: Blue cheese is traditionally associated with wings, but it’s an acquired taste. If you’re not a fan, feel free to substitute it with feta, goat cheese, or your favorite cheese.
Green Onions: Adding sliced green onions as a topping is entirely optional. Alternatively, you can also use sliced celery.
Seasoning: I recommend using Everything Bagel seasoning for added flavor. It’s a versatile seasoning to have in your pantry. However, you can omit it or use ground black pepper if you prefer. I find that this recipe doesn’t require additional salt since the buffalo sauce and cheese usually provide enough flavor.
Ranch: For extra flavor, drizzle Ranch dressing over the pizza once it comes out of the oven. And let’s be honest, can you ever go wrong with Ranch dressing? (Tip: Those little packets of sauce you get at fast-food restaurants will come in handy for many recipes in the College Student Recipes collection.)
You may also like to add jalapenos, thinly sliced red onion, or mozzarella on your flatbread.
How to Make Buffalo Chicken Flatbread
Everyone loves Buffalo chicken, Buffalo Chicken Dip, and Bang Bang Cauliflower Bites, which are healthier alternatives to traditional wings. This recipe draws inspiration from those popular dishes.
To make Buffalo Chicken Flatbread, combine shredded or cubed cooked chicken with 2 to 3 tablespoons of buffalo sauce (or hot sauce/Sriracha sauce). Spread the chicken evenly over the flatbread.
Sprinkle your choice of seasoning over the top, then crumble feta, blue cheese, or any other cheese you prefer.
Heat the flatbread in a toaster oven until it’s heated through and the cheese has melted.
Garnish with a squeeze of Ranch dressing and a sprinkle of sliced green onions.
