The thin layer of chocolate leaves much to be desired in terms of flavor. Intrigued by the idea of enhancing these treats, I decided to experiment with a better chocolate coating. Now that I’ve experienced the upgraded version, I can never go back to eating them plain!

Key Tips for Creating Dark Chocolate Coated Nutty Buddies
Utilize Baker’s Chocolate!
I cannot emphasize enough the importance of using baker’s chocolate. It proves much easier to work with compared to other types of chocolate, like chocolate chips. Other varieties are prone to seizing up and altering the texture. Fortunately, baker’s chocolate maintains its silky smooth consistency when melted. It’s worth spending a few extra dollars to avoid the hassle!
For this recipe, I recommend using Ghirardelli 60% cacao bars. They melt effortlessly and retain their smoothness for an extended period of time. Whenever my local grocery store offers a discount on these bars, I make sure to stock up!
Create a Make-Shift Double Boiler if Necessary
Melting chocolate in a double boiler is the most stress-free way to keep the chocolate consistently melted as you work your way through coating each piece. Freeze Your Nutty Buddies (Don’t Skip This Step)
If you attempt to coat a room temperature Nutty Buddy with hot chocolate, you’ll inevitably encounter issues (believe me, I’ve learned this the hard way). The hot chocolate will heat up the Nutty Buddy, causing the existing chocolate layer to melt into your dipping chocolate. To prevent this undesirable outcome, the peanut butter filling from becoming too melty, and the wafers from sliding apart during the coating process, it’s crucial to freeze the package of Nutty Buddies for at least a few hours prior to working on them. While the twin-wrapped pairs may stick together when frozen, they should easily separate after a minute or two on the counter, allowing you to proceed with the coating process.
Optional: Cut Nutty Buddies in Half for Smaller Portions
While most of the images featured in this post showcase full-sized bars, you can also opt to cut the Nutty Buddies in half before coating them to create smaller servings. Surprisingly, no additional chocolate is required for the half-sized bars. Take a look at the picture below for reference!
