- 4 wood pigeons

Brown the wood pigeons in the oven for approximately 15 minutes. Remove and keep them warm. Sauté the onions, shallots, garlic, and carcasses. Lightly flour the mixture. Drizzle with red wine and broth, add the bouquet garni, salt, and pepper. Bring to a boil and let it reduce. Pass the sauce through a sieve over the wood pigeons, simmer the entire dish in a low oven for 20 minutes.

- 120 gr of brown sugar
- 80 gr of melted butter
- 10 gr of baker’s yeast
- 1 tablespoon of vanilla sugar
- 1 pinch of salt
- 1 tablespoon of pastis
- 1 tablespoon of orange blossom water
- ½ glass of milk
Prepare a leaven by dissolving the yeast in lukewarm milk. Mix in 1 egg, a pinch of salt, and 100 g of flour. Allow the mixture to rise for 1 to 2 hours. Beat the other 2 eggs and add sugar, salt, melted butter, milk, leaven, flavors, and the remaining flour. Knead the dough and place it in a buttered mold. Let it rise in a warm place for 6 hours. Bake in the oven at 180°C for 40 minutes.
